Ginseng Cordyceps Chicken Soup in Pumpkin Pot - 人 参 虫 草 鸡 汤 炖 金 瓜 盅

 


Preparation for Soups: (Serving 5-6 pax)

1 whole          Chicken without head. (Washed clean, chicken feet-nails to be cut.)
                      ( Cut all chicken into small pieces.)
1 pckt            Ginseng Cordyceps herbs - Uncle Sun (Brand of your own choice)
                      Salt - to own taste.
5 litres            Water.

Use a big pot enough to boil 5 litres of water with all the ingredients together for 1/2 hr,
then lower heat & let it simmer. (Try your own taste)

Pumpkin Pot:

Ingredients: (Serving 4 pax)

2 whole           Pumpkins.

Methods:

1.           Washed, cut the pumpkins into halves and scrape off all the seeds.


2.           Place each half of pumpkin into a bowl just nice to fit in. Repeat balance halves
              with same.


3.          Heat up wok/steamer with water enough for steaming/stewing.
4.          Place/arrange nicely the pumpkin bowls in a wok or steamer. 
             (Now come back to the pot of soup) Then from the pot of soup, collect &
             distribute equally the herbs, chicken pieces together with some soups, 
             and put into the pumpkin bowls. (Fill till full will do)


5.         When everything is ready, cover the wok with lid and start to stew for 1/2 hr.
6.         Open lid to check whether water for stewing lessen - just add, or soup in the 
            pumpkin bowl lessen - just add soup from the pot. Cover the lid again and 
            continue stewing for another 1/2 hr.
7.         Turn off heat, also for the pot of soup. (dont forget)
8.         Ready to serve each one a bowl.

Note :

The pumpkin flesh is nice to eat, very sweet. If the soup is not enough, can refill
from the pot of soup but the taste is a little different without the pumpkin..

Treasure Taufoo Box - 宝 贝 豆 腐 盒




Ingredients: (Serving 2-3 pax)

2 pcs             White Taufoo 

Ingredients A:

60gm             Meat (Chopped & Blended into paste)

2-3 slices       Sengkuang - ) Chopped &  
3-4 slices       Carrot.      - )  Diced 
 
3-4 drops      Sesame oil       - ) To own taste
1/2 tsp           Oyster Sauce  - )
A pinch          salt                 - )     

                      
                      Oil for frying.
                     * The sengkuang & carrot diced use only 2/3, take 
                        out 1/3 for garnishing

Garnishing:

2 pcs              Prawns (Shelled but leave the tail portion,)
1/3                 of the *noted.

Gravy Sauce:

100 ml            Water                                - )  Mix well.
                       Few drops light soy sauce  - )
1/2 tsp            Cornflour                           - )

Methods:

1.                Mix well all the ingredients A. and set aside for ready use.
2.                Heat wok with oil in low heat. Take a piece of taufoo, use a small
                   knife to cut a square (U) shape on top, about an inch deep.


3.             Then slowly slide into the wok to fry till both sides turn golden brown.
                Dish off access oil and put on a plate. Repeat the other.
4.             Use a steamer to boil enough water for steaming.
5.             Come back to our taufoo..Use a teaspoon slowly flip open the top skin.
                (The place where you've already slightly cut) Dig out  portion of the
                taufoo, making it like a box. (Put access taufoo aside)

        

6.              Now you can use a teaspoon to scoop some mixture (Ingredients A) and put
                 into the taufoo to fill up the hole.
7.              Lastly, put in the garnishing, cover back the flip top cover.

8.           Place the taufoo on a plate and pour the gravy sauce over it. 
9.           Then put to steam for 7-8 mins.
10.         Turn off heat, take out the dish & ready to serve.

Dried Salted Veggies with Roasted Pork Bones & Taufoo Soup - 干咸菜煲烧骨豆腐汤




Ingredients: (Serving 4-5 pax)

350+ gm            Dried Salted Veggies.
450 gm              Roasted Pork Bones with some meat (Flesh)
4-5 slices           Ginger.
1 pc                   Tomato - Cut into wedges.
3 pcs                 White Taufoo - Cut into cubes.
5 liters               Water.



Methods:

1.               Heat 5 liters of water in a pot.
2.               Cut salted veggies into required length, then, just soak for 2 mins, and
                  press off all access water. Put into the pot to boil.
3.               Just slightly wash the roasted bones and put to boil together with the ginger.
4.               Continue boiling for 10-15 mins. If water lessen, just add back.
5.               At this time you will see a layer of foam bubbling up. Just use a soup ladle
                   to scoop it away.


               
6.             Lower the heat, now can let the tomato wedges & taufoo cubes join in.
                Let it simmer for 1 1/2 to 2 hours.
7.             Time to test your taste. It should be exactly suit your flavours. Little sweet with
                a little saltish...
8.             Turn off heat & served hot.

Noted :

               There is no salt added b'cos the salted veggies are already saltish..

Hi..Good Morning..
I should greet every good fellows here....

I'm here again....I'm lucky....I'm still alive....

About 20+ years ago....

I got my driving license, but then I never drive for ten years....
The first time I'm sitting in the car's driver seat, driving my first
Mini Car back home alone......My other one was guiding me,
not sitting beside or behind me...! but following me at the back...

I thought I was very brave and smart enough to drive alone...no...

When I reached home, I really cannot walked into the house..!!
Then only I realised that I'm shivering...my leg...After about 5 mins
or so, I calm down..no, I'm not scared...its actually interesting, and
enjoying...hahaha...

Until now, I've been driving 10 years...Is it more interesting?
exciting? enjoying? Hmmm...I will tell you I have to add in "tiring,
boring and scaring."

1st Incident:

Not long after I got my Mini. One day while I was driving @ 60mph,
is it very fast? though its not a highway but a 3-lane main road, it suddenly
turned into a "Whirlpool..!!" It swirled up! I've lost controlled..
It continued....My mind got blank...its just like a piece of paper..blank..
Could'nt be helped but to hold tightly the steering with both hands, saying
to myself "Ok, I will go swirling with you, till you stop..!!"

I don't know how long it continued untill I heard a banging sound...it stopped..
I opened my eyes..Thanks God..its not crashing into others but my Mini...the
right side at the back, crumpled and dented. It hit against the concrete block..
From the fast lane swirling to the slow lane...
Very lucky..no accident or crashing happen..

2nd Incident:

About 5 years ago, same thing happened ...but this time I was with my
youngest daughter. Its not spinning but twisting like a snake..!! Out of controlled,
no brake, steering no lock...really does'nt know what to do..but very fast back to
normal..what happened?????Really scared my daughter.

Very, very, lucky....the Mini did'nt trumbled.
Again no accident or crashing...

3rd Incident:

Recently...2 weeks ago..with my youngest daughter sitting @ back...
This time is not a Mini...its a 1.8 Auto..
My carelessness..my car's rim swiping against the divider!!!
My God...I slept..!!

Very, very, very lucky again, no accident..
I'm still alive......

What does all these signs indicates???
Or there is an Unlucky Star following me???

3 times..ya..3 times my life skipped..

大 难 不 死,必 有 后 福.....
Is that true...???

To all who drives, if you are tired, drowsy or feeling sleepy, please don't drive..

Lazy Prawns in Black Pepper Sauce.





Ingredients: (Serving 2-3 pax.)

400+ gm              Medium Prawns. (Whole prawns with shell - washed.)
1 tbsp                  Oil.

Seasoning:

1/2 tsp                Salt.
1/2 tsp                Shao Hsing Wine.

Mixture:

2 1/2 tbsp           Black Pepper Salt. - )  According to
1 1/2 tbsp           Sugar.                    - )  own taste
100 ml                Water                    - )

Methods:

1.                 Put all prawns in a bowl, add in seasoning and set aside to marinate
                    for 3-5mins. (This can be done before hand.)
2.                 Heat wok with 1 tbsp oil.
3.                 Add in marinated prawns, stir fry for 3-4 mins.
4.                 Add in mixture, continue to stir fry another 3 mins.
5.                 Turn off heat, dish out on a plate and served.

Ginger Fry Mini king Oyster Mushroom - 姜片炒少皇菇




Ingredients: (Serving 3-4 pax.)

300 gm          Mini King Oyster Mushroom. (Washed & cut into thicker slices)
7-8 Slices      Ginger.
1/2 tsp           Garlic. (Chopped)
2 tbsp            Oil.
1 tbsp            Oyster Sauce.
1/2 tsp           salt.
1/2 tsp           Shao Hsing Wine.


Methods:

1.             Heat wok with 2 tbsp oil.
2.             Put in garlic to saute a little, add in ginger, stir fry a min and then put in all
                the mini king together with salt - to taste. Continue stir fry for 3 mins.


3.            Now add in oyster sauce & shao hsing wine, stir a little & cover the wok.
               Lower the heat, let simmer for another 3 mins.
4.            Take off cover, stir, a little gravy can be seen...then dish out and served.

3 Melons with Pork Belly & Ribs Soup - 三瓜褒排骨与三层肉汤




Ingredients A: (Serving 4-5 pax)

5 Liter            Water.
10 pcs            Red Dates
1 pc               Papaya - Half Riped/Unriped.
1 pc               Buddha Hand Gourd/Chayote. -佛手瓜
1 pc               Bottle Gourd. - 葫芦瓜
350 gm          Pork Ribs. ) Cut into bigger pieces &
500 gm          Pork Belly.)  parboiled.


Ingredients B:

6 Slices        Abolone.
1 Big            Onion. - Peeled rotten skin & cut into wedges.
                    Salt. - To own taste.

Methods:

1.                 Heat a pot with 5 liter of water.
2.                 For ingredients A, washed all melons, removed seeds, stem & cores,
                 

                     then cut into bigger pieces and put all into pot to boil, followed by
                     red dates, meat & ribs. Continue boiling for 10 mins. then lower the heat.
3.                  Add in ingredients B


4.                  Continue to simmer for 2 hours at low heat. (If water lessen, just add
                      back a little.)
5.                  Turn off heat & serve hot

2.          Buddha Hand Gourd/Chayote enhances skin conditions & beauty.
3.          Bottle Gourd promotes urination and retrieves edema/swelling.

Braised Potatoes With Lean Meat - 马玲薯焖瘦肉




Ingredients: (Serving 3-4 pax)

500 gm          Lean Meat                     ) Washed and
4 pcs             Potatoes - Skin Peeled  ) Sliced
3/4 tsp          Salt
2 tbsp           Oil
2 tbsp           Dark Soy Sauce
1 tbsp           Sugar
700 ml          Water

Methods:

1.                  Heat wok with 2tbsp oil.
2.                  Put in meat & stir fry a min, then add in potatoes, continue to
                     stir fry for 5 mins.
3.                  Add in salt and water. Stir a little, then cover
                     the wok. Lower heat and let simmer for 15 mins.
                     (In between 3-5 mins take off cover to stir a little, not to let the
                     dishes stick on to wok or burn, also not to let it cook dry.)
4.                  Take off cover, add in dark soy sauce & sugar. Stir fry again.
                     Check whether potatoes are cooked, and if the dishes are dry,
                     add little water to give it some gravy.


5.                  Dish out on a plate and served.
                 
               

News From A Friend.


A call from a friend whom I have'nt had lunch with for quite a long time since my
Phuket Trip till now.

I thought she called me up for lunch again. No..she told me she had a bad incident.
Her handbag was snatched by a snatcher....
It so happened that the day was her payday from her husband. Apart the cash, she
still have her valuable items inside the handbag..probably must be jewelry gifts from
her husband, I/D Card & other cards too, all gone..

Location somewhere in Ampang, while they are waiting for the traffic light. A motorist
with a partner at back seat, suddenly took an iron bar and hit the mirror of the
passenger's seat, where she was sitting, then snatched the handbag & run off....
The worst is no one give a helping hand...

She had some cuts and bruises on her hand. All that she can do is to lodge a police
report and seek medication & dressing on the injuries...

Reminders to us and everyone, especially we ladies....while we are travelling, either
driving or sitting on the passenger's seat, NEVER put your handbag on your lap..

Pineapple With 3-Colourful Peppers Frying Up The Squids - 凤梨与三色椒炒鱿鱼




Ingredients: (Serving 3-4 pax.)

2  pcs                Squids
3  slices             Pineapple (Cut into small pieces.)
1/2 pcs each     Pepper - Yellow  )
                                      - Green  ) All cut into smaller piece
                                      - Red     )     
2  tbsp              Oil
1/2 tsp              Salt
1/2 tsp              Garlic

Gravy: ( To Own Taste.)

100 ml              Water             )  All mixed
2 tbsp               Plum Sauce    )  well.
1 1/2 tbsp         Sugar             )


Methods:

1.                    Washed clean the squids and cut into ring type abt. 3/4 inch apart.


2.                  Heat up wok with 2 tbsp oil. Add in garlic to saute a little, then add in all
                     the colourful peppers and stir fry for a min.
3.                  Now can put in the squids & continue to stir fry another 2 mins.
4.                  Next, let the pineapple join in together with the salt, continue frying for 
                     2-3 mins.
5.                  Lastly, pour in the gravy and stir well for another min.
6.                  Dish out on a plate and serve.
                     One attractive dish suitable for everyone.

Petola (Angle Loofah) Frying Dried Scallops With Small Prawns - 丝瓜炒干贝与小虾




Ingredients: (Serving 3-4 pax.)

1 pc.                Petola.
10 pcs.            Prawns. (Shelled & Washed.)
1 tsp.              Garlic. (Chopped.)
1/2 tsp.           Salt.
3 tbsp.            Oil.

Ingredients: B

7-8 pcs.          Whole Mushrooms. (Soaked Soft.)
5-6 slices        Carrots.
3 tbsp.            Dried Scallops. (Washed.)

Gravy:

1 tsp.             Cornflour.  )  Mixed
150 ml.          Water.       )

Methods:

1.             First, cut off petola's hard skin.


2.             Then slice it in a diagonal way. Keep rolling after each cut, till finish
                 cutting the petola.


3.            Heat up wok with 3tbsp. oil. Put in garlic to saute a little, add in all ingredients B.
               Stir fry for 2 mins. then add in petola and salt, continue stir fry another 2 mins.


4.            Add in prawns follow by the gravy. Stir fry another 3 mins. (If the gravy is too
               thick, you can add a little water as to own choice.)
5.            Dish out on a plate and ready to serve.

My Trip.

Its a long time not going thru my blog, and no recipes to share..
Do not know that whether I'm not good in planning my time or
just busy with my work..

Everytime when I come home, Im feeling of worn out..!
This time travelling to the East Coast - Kota Bharu, the other's Hometown..
Just to participate "Cheng Beng."

Started journey on 27th March, abt. 2.30pm and reached abt. 11pm..
Sit in the car till buttock gone flat....

Next day, helping Sister-in-law to shop all necessary things.
In the evening we just go shopping in one or two shopping malls, and that's
one day passed.

Today, 29th March, pay a visit to his Uncles..half a day.
After that, we took a journey to Rantau Panjang..all the way to the border-line,
Thailand..but did'nt enter....Aah..our luck is not that good..its a rainny day..!!
But we still go walk walk, see see..and bought something back..
That's my favourite.. dodol..

Aah...something caught my sight..I got a packet of beras dagang - that's the nasi dagang.
Wanting to try cook this rice. Hmm..if I'm successful..my recipe will be out soon..
And hope I can do it..good luck to me..

Wake up very early to help the SIL, preparing & packing all those
that are needed for praying. When everything is ready, we start our way to the Cemetry.
Spend half a day there.

After our lunch in KB we start our journey back to KL.
All the way driving, no jokes, no funs, a lonely day.....

Reached KL almost midnite...
