WOLFBERRY WITH RED DATES DRINK - 枸杞红枣茶



Ingredients:

1  Rice bowl full        Red dates
1  Rice bowl full        Winter-melon strips (Replacing sugar)*
3 Soup spoonful        Wolfberry
2,000 ml                    Water


Methods:

1.                 Heat a pot of 2,000 ml water.
2.                 Just rinse clean wolfberry & dates. Put into the pot to boil for 5 mins.
3.                 Add in the melon strips, continue to boil for another 5 mins then lower the
                    heat and let boil for 30-45 mins.

Notes:

                    *The melon strips is sweet enough so there's no need to add sugar.
                      During the boiling time, if water lessen just add back.
                      If it can't finish by the day, pour into bottles & can keep in the fridge
                      for 2 days. But the best is to finish it the same day.

WORDS FROM THE BOTTOM OF THE HEART


Honestly, I hold in a lot.  When I'm upset, I really don't like to tell anyone.
Especially the person who made me that way..
No matter how much anyone asked, the answer will always be "I'm fine"
even if it's not true. Many times I want to cry, but I can't feel anything.

I acted like it was'nt a big deal when really it was breaking my heart..with the
feelings that there's no friend in the world, homesick for a place I'm not sure,
even exist where my heart is fully filled, being loved and soul understood..


When I'm happy, I can't stop talking. When I'm sad, I will not say a word.
Sad or Happy, it makes no difference, no one cares anyway..
Because sometimes the people you can't live without, can live without you.

If one day when you started to MISS me..

I did'nt walk away, its YOU LET ME GO.
It hurts, but its OK. I'm used to it. No feelings, no pains.

AMERICAN GINSENG CORDYCEPS WITH CHICKEN SOUP - 西洋参虫草鸡汤



Ingredients : (Serving 3-4 pax)

2 pcs              Chicken drumsticks
2 pcs              Chicken wings
1/2 tsp            Salt                        )
2 tbsp             Shao Hsing Wine  )   To own taste
                       Dash of pepper     )
500ml             Water

Herbs :

1.                    Solomon rhizome         (玉竹)
2.                    Cordyceps                    (虫草)
3.                    Wolfberry                     (枸杞)
4.                    Chinese yam                (淮山)
5.                    Bastarg Ginseng          (党参)
6.                    Astragalus                    (黑芪)
7.                    Pack of herbs powder


Methods : 

1.                      Heat up wok/steamer with enough water.
2.                      Clean chicken drumsticks & wings. cut off all extra fats.


3.                     Put into a big bowl, add in salt, pepper, shao hsing wine, then rub
                        evenly over the drumsticks & wings. Lastly add in the herbs on top
                        of the meat, then pour in 500ml water.


4.                     Put the whole bowl into the wok/steamer, cover the lid and steam
                        for an hour.


5.                     When cook, ready to serve right out from the steamer..


*  Note :          It is easy to prepare & good for confinement mothers too.  Cordyceps
                        improves the health of vital organs - the kidneys & lungs. This soup
                        also improves immuity and increases strength..

GUANGXI PANCAKES - 广西煎餅




Ingredients:

Few stalks               Spring onions     ) Chopped
Few stalks               Chives                )
1 cup                       Flour
                                Water - Add to requirement
                                Salt/sugar           ) To own
                                Pepper                ) taste
                                Oil for greasing



Methods:


1.                           Combine chopped spring onions, chives & flour in a bowl. Add in
                              salt/sugar, pepper. Then slowly pour in water little by little, stir &
                              mix evenly to make a batter.



2                             Grease a small round pan and heat on low heat. Use a ladle to scoop
                               1 or 2 of batter into the pan & let heat for few mins. Then turn over
                               another side to heat again or until cook.


3.                              Continue to pan heat the balance of batter till finish.
4.                              Serve with honey, jam or any other fillings/toppings of own
                                 favourites.

STUFFING TAUFOO BALLS ~~THE GUANGXI STYLE - 广西釀豆腐卜




Ingredients: ( 3-4 pax)

350+ gm          Minced meat
8-10 stalks       Chives (Minced)
10 pcs              Fried taufoo balls
1000 ml           Water
1 tbsp              Wolfberry
3-4 pcs            Dang Kwei
                        Salt and pepper to taste



Seasonings:

1/2 tsp              Salt                  )
1 tbsp               Oyster sauce   )  To own
1 tbsp               Sesame oil       )
1 tbsp               Cornflour         )  taste
                         Pepper            )

Methods:

1.                       Mix minced meat and chives together, add in all seasonings then
                          mix well.
2.                       Stuff the meat mixture into the taufoo balls.
3.                       Boil a pot of 1000ml water.
4.                       Add in wolfberry, dang kwei, salt, pepper, together with the stuffed
                          taufoo balls. Let boils for 5 mins. Lower heat and continue to boil
                          for 10-15 mins. ( Test soup taste)



5.                      Ready to serve the stuffed balls with soup.

OLD CUCUMBER WITH COCONUT FLESH IN HERBAL SOUP - 老黄瓜煲椰肉药材汤




Ingredients: ( Serving 4-5 pax )

1 pc.            Old cucumber (Wash clean and discard seeds)
1 bowl         Coconut flesh (Flesh from 1 whole coconut)
1/2  pc.        Chicken breast bone.
4-5 pcs.       Chicken feet (Remove the nails)
                    Salt to taste.
3000+ ml     Water.

Herbs:

1 tbsp           Wolfberry
1 cup            Red dates
5-6 pcs         Codonopsis pilosula (党参 )
                     Few strips Yu Zhu (玉竹 )



Methods:

1.                  Heat a pot with 3000ml water. Rinse washed the herbs and put to boil.
2.                  Cut old cucumber, chicken breast bone, chicken feet, all into smaller
                      portion, together with the coconut flesh, put into pot to boil for 10 mins.
3.                  Lower heat to medium, add salt to taste. Continue to boil for 1-2 hrs.


4.                  Turn off heat. Serve hot.

Note:             This soup is to expel heat & dampness.
