OLD CUCUMBER WITH COCONUT FLESH IN HERBAL SOUP - 老黄瓜煲椰肉药材汤




Ingredients: ( Serving 4-5 pax )

1 pc.            Old cucumber (Wash clean and discard seeds)
1 bowl         Coconut flesh (Flesh from 1 whole coconut)
1/2  pc.        Chicken breast bone.
4-5 pcs.       Chicken feet (Remove the nails)
                    Salt to taste.
3000+ ml     Water.

Herbs:

1 tbsp           Wolfberry
1 cup            Red dates
5-6 pcs         Codonopsis pilosula (党参 )
                     Few strips Yu Zhu (玉竹 )



Methods:

1.                  Heat a pot with 3000ml water. Rinse washed the herbs and put to boil.
2.                  Cut old cucumber, chicken breast bone, chicken feet, all into smaller
                      portion, together with the coconut flesh, put into pot to boil for 10 mins.
3.                  Lower heat to medium, add salt to taste. Continue to boil for 1-2 hrs.


4.                  Turn off heat. Serve hot.

Note:             This soup is to expel heat & dampness.
