Marmite Prawns - 妈 蜜 虾





Ingredients: (Serving 2-3 pax)

500 gm                Prawns. (Whole prawns with shell, washed clean)
                            Oil for frying.



Marinade: (腌 料)

1/2 tsp                  Salt.
1 tbsp                   Shao Hsing Wine.
                            Dash of pepper.

Mixture Gravy:

1 1/2 tbsp             Marmite.                            -) To own
2 tbsp                   Fine Sugar.                        -)
150 ml                  Water.                                -) taste
1 tsp                     Dark Soy Sauce.(Optional)



Garnishing: (Optional)

Few coriander leaves.

Methods:

1.                 Put all prawns in a bowl, add in marinade, mix well and set aside
                    to marinate for 3-5 mins.


2.                 Heat wok with oil enough for frying.
3.                 Slowly put in marinated prawns to fry for 2-3 mins.



4.                Dish out prawns and drain off all access oil, then put on a plate.



5.                 Pour away access oil from the wok, using same wok, put in
                    the mixture & stir fry for 2-3 mins, under low heat, till sugar dissolved.




6.                Now add in ready fried prawns, stir & mix well for just 2 mins.



7.                Turn off heat, dish out on a plate, put on some garnishing (optional)
                    then served.

Note :

If gravy is a little watery (you think), just deduct water to 100 ml.

Dumplings In herbal Broth - 水 饺 药 材 荡




Ingredients: (Serving 2-3 pax)

400 gm+              Minced Meat with little fats.
2 slices                 Carrots.                 -) Chopped
1 slice                   Sengkuang (沙葛) -) Chopped

3/4 tsp                  Salt.                  -) All to
1 tbsp                   Oyster Sauce.   -)
1 tbsp                   Sesame Oil.      -) own taste
3 tsp                     Cornflour.         -)
                            Dash of pepper. -)
                           
                            Few Stalks of Choy Sam (Washed & clean)
                            (Veggies of own choice).

Dumpling Skin:

8-10 pcs             Wanton Skin.

Broth:

2.5 litre               Water.
1-2 tsp                Salt.
                           Dash of pepper.
1 pcs                   Licorice Root .(甘草)
3-4 pcs                Dang Gui .      (当归)
1 tbsp                 Wolfberry.       (枸杞)



Methods:

1.              Use a big bowl and put in all the ingredients and mix well.
                 (Except the veggies.) Set aside for wrapping use.



A.             Wrapping:

1.              Take a piece of wanton skin, place flat on your palm. Then scoop
                  2-3 tsp. of the mixture and put onto center of the wanton skin.


2.           Wet the wanton skin edges with some water. The fold into half and press
              a little at the edges semi-round so that it will stick together and its done.


3.            Put it on a plate. Repeat the rest till all finish. Then let's go to the broth.


 B.            Broth.

1.             Fill a pot with 2.5 litre and bring to boil.
2.             Then put in the herbs and boil for 3 mins. Add in salt and pepper.


3.             Slowly put in the ready wrapped dumplings, one by one, let boil
                for 3 mins.


4.              Lastly, add in the veggies and cook for 1-2 mins, then turn off heat.
5.              Scoop out the dumplings and put into a bowl and serve hot.

Pig's Stomach With Chicken Feet In Pepper Herbal Soup - 猪 肚 煲 凤 爪 胡 椒 药 材 汤




Ingredients: (Serving 4-5 pax)

1 no.                 Pig's Stomach (Washed clean & parboiled)
500 gm             Chicken Feet (Cut off nails)


Soups Ingredients: Top pictures.

3.5 litre               Water
2 tbsp                 Pepper Seed  (Whole)                - ) To own
1 tbsp                 Pepper Seed ( Pounded a little)   -)  taste
1 pcs                  Ginger ( Sliced)                            -)
2 1/2 tsp             Salt                                              -)

Herbs: Bottom pictures.

From top.

2 pcs                    Licorice Root       (甘 草)

Left to right.

30-40 gm             Red Dates             ( 红 枣)    
25 gm                   Dang Gui - Angelica Root (当 归)
30 gm                   Wolfberry                         (枸子)


Methods:

1.            Pour 3.5 litre of water into a pot and bring to boil. Add in the soup ingredients
               and herbs. Let boils for 3 mins.
2.            Turn heat to medium. Add in the pig's stomach & chicken feet and continue to
               boil for 15 mins. (If there's foam seen, just scoop it away).



3.            Lower heat, take out the pig's stomach and cut it into strip - smaller pieces.
              Then put back into the pot and add in salt to taste, continue to simmer for
              45 mins - 1 hr. (If water lessen, just add back.)
4.           Turn off heat and serve hot.

"Pai Tee" 杯 仔 菜




Ingredients: (Serving 2-3 pax)

6 nos.            Paper Cups (Snaller size)
6 pcs             Wanton Skin
                     Oil for frying
100 gm+       Chicken Breast - ) Cut into smaller
2-3 cloves     Cauliflower       - ) pieces

1 slice each    Green Pepper   - )  Cut into smaller
                      Yellow Pepper   - )  cubes
                      Red Pepper       - )
1 tbsp            Oil
1/2 tsp           Garlic - (Chopped)

Seasoning:

1/2 tsp          Salt                
1 tsp             Oyster Sauce
                     Dash of pepper

1/2 tsp          Cornflour - ) Mix
50 ml            Water      - )

Methods : Pai Tee Cups.

1.             Get ready a paper cup, line it with a piece of wanton skin, press it
                a little to make it to shape as a cup.



2.            Heat wok with oil for frying under medium heat.
3.            When oil is hot, just put in the shaped wanton skin to fry till golden
               brown. Then drain off access oil and put it aside.
               Repeat till finished
               * ( Skip this if it is the baking type.)

4.            Pour out all the oil leaving 1 tbsp of oil in the wok.
5.            Turn on heat, saute garlic a little, then add in the chicken pieces and
                stir fry for 2 mins.
6.            Now add in the cauliflower, all the colour peppers, continue to stir
               another 2-3 mins.
7.            Put in the seasoning, stir fry for 3 mins and its done. Then dish out on a plate.


8.            Use a teaspoon to scoop the cooked veggies and fill into the ready fried wanton
               cups.


9.            Ready to serve....or serve yourself personally.

Note:

*    For the wanton skin, you can line it into the cake mould & bake it at low
      temperature in just short minutes. (Adjust ownself).

Bz Hard Working Days.

Time flies...I've been away from here almost 3 weeks...
Really difficult for me to squeeze some of my time staying here or
to share some of my enjoyment & happiness with everyone ..

Well..,I will be very bz & hardworking the coming days..cos
I've to 'arrange' and 'planning' the big wedding day for my 2nd daughter.
Congratz to her that she have found her other half. Though she's about to marry
away, but I own half a son back...

The first week travelling down South, to settle some personal matters.  At the
same time partially enjoying holidays too.

2nd & 3rd weeks..bringing the children for shopping..
Pooh....tiring...they bought & get what they need..but I still have'nt start with
mine yet...!!

OK..its time for me to go step by step..Give me some time..
